Breakfast time - on-the- go breakfast bars!


Morning!!

Thought might be something to try on a rainy, WINDY day and just before school starts!! The majority of the recipes I try and 'play around with' will always be quick and easy!! This is the reality for working parents with a number of kids... plus you dont want/need to spend your whole day just cooking!!!

These bars are awesome to grab on your way out the door, also great for the kids lunch boxes as apparently schools are only concerned with the use of peanuts in lunches (please correct me if im wrong!).....

I got this recipe ages ago from a site www.Elanaspantry.com.... excellent source of 'paleo' recipes!

Breakfast Bars

1 ¼ cup almond meal
¼ teaspoon celtic sea salt (or I use himalayan pink rock salt)
¼ teaspoon baking soda
¼ cup grapeseed oil
¼ cup honey (you can use agave nectar but Im not convinved on it 'goodness' yet)
1 teaspoon vanilla extract
½ cup unsweetened shredded coconut
½ cup pumpkin seeds
½ cup sunflower seeds
¼ cup blanched slivered almonds
¼ cup raisins (or you could use apricots, cranberries etc)
  • In a small bowl, combine almond flour, salt and baking soda
  • In a large bowl, combine grapeseed oil, honey and vanilla
  • Stir dry ingredients into wet
  • Mix in coconut, pumpkin seeds, sunflower seeds, almond slivers and raisins
  • I must admit I have been crunching or 'blitzing' the seeds and nuts a bit for the kids to make it less obvious.... playing 'hiding the nutrients' game...
  • Grease a 'slice tin' with grapeseed oil or can use baking paper...
  • Press the mix into the tin. It helps to wet your hands
  • Cook for 20 minutes on 180
  • cut into desired sized bars!

Quinoa Patties


These patties were shared by a great friend Fi Tundulin.... looking forward to giving them a go!


Quinoa Patties (makes 8)
...
1/3 quinoa cooked by the directions on the packet then cooled
2 eggs, beaten
1 grated courgette*
1 grated carrot*
1/2 onion, diced
30g cheese grated (on a good day only for me)
2 tbs buckwheat flour (or your other GF favourite)

*I use whatever veggies I have in the fridge - these are just my favourites. Frozen peas and corn is another really easy one. The only thing that hasn't worked great has been beans... they don't cook fast enough... although I guess you could steam them first.

Mix everything up in a bowl until it is combined. It should be fairly sticky.

I cook mine in a dry pan in egg rings on a moderate heat, but they're also really nice cooked with a bit of olive oil in the pan. They take about 2-3 minutes a side. I always reheat them in a pan if there are leftovers - they go soggy and hard at the same time in the microwave.
 

Coconut Balls - kids and adults party favourites

Made these for Klaudias second bday party the other day.... easy as and everyone LOVED them!! Definitely makes a difference to use organic products, such a big taste difference!! However I think its important for people to work that out themselves. When shopping, always take a quick second to check out the ingredients... I cant believe some of the horrible things that get 'snuck in' when you think you are just buying something like 'shredded coconut!!!

Coconut Balls

1/2 cup of coconut oil
1/2 cup of coconut butter
1 1/2 cups of unsweetened shredded coconut
3 tbsp of honey (use more of less depending on how sweet you mant to make them)


- melt the coconut oil and coconut butter in a saucepan over a low heat then remove
- add the honey to the mix and stir
- add coconut and mix in
- roll into balls and put them in the fridge to cool down/set.

Dont forget that these will melt on a hot day!!

My Story

My Name is Jess and I am a mother of two children, Cayden 4 and Klaudia 2. The idea of this 'facebook' page stems from the battle my husband and I have just endured with Klaudia who from the age of 7months and up until approx. 8 weeks ago, we believed had a very poor immune system.  From 7 months, Klaudia has continually suffered from chronic throat infections, ear infections, eye infections, chest infections and a myriad of other illnesses. Klaudia had her tonsils and adenoids removed and grommets inserted as soon as she turned one, but it made no difference.  Klaudia’s symptoms continued to get worse and she also started suffering from very painful rashes all over her face, chest and bottom. Her weight would continually fluctuate and we struggled to keep it on her.  We consulted ridiculous numbers of GP’s, Holistic Doctors, Nutritionists, Pediatricians, Dermatologists, and Optometrists and subjected Klaudia to a number of tests without any results. Please note this also included various allergy testing.

Klaudia was literally living on antibiotics to the point where they weren’t even helping to fight the symptoms anymore. We tried just about every medicine, cortisone and natural remedy known to man with her condition’s often requiring hospitalization. We were desperate; we really didn’t know where things were headed and began to assume the worst.

As desperate parents, we started talking to anyone and everyone who would listen in the hope that we might be given another idea to try…. And this is how we found our new direction and ultimately the change to get both out daughter, and our own life back under control and looking forward!!!

…… You see Klaudia suffers from a number of food intolerances!!! It is also believed that Klaudia is ‘Celiac’ however does not test ‘positive’ with the current tests available.

By completely removing Gluten, all Grains (with the exception of rice at this stage), and most preservatives and colorings from Klaudia’s diet…. Everything has almost cleared up, she hasn’t suffered from any illnesses for almost 6 weeks (touching wood!!) and she has finally reached 10kgs (27/1/13).

….. So now what do we feed her…..

Obviously now most packaged foods, pre-made meals, tins, sauces etc are no longer really an option for us as my husband and I both agreed that if this was the life Klaudia had to live… so did we!! And my goodness do we feel wonderful for it!!! J

Basically though, we are cooking everything from scratch and so this is where the idea of this page has come from!!! I continually need to do research on whether foods, ingredients and recipes will work for K so I thought… why not share them!! I have also had wonderful feedback from family and friends who are subjected to our meals when they visit and as a result, want the recipe!! J

Sooooooo please feel free to also share any recipes, research and information too and that way we can all be helping each other!!!
